Introduction

This Is The One is our gluten free pale ale, brewed in Randalstown, Northern Ireland. At 4.2% ABV, it combines a soft, approachable malt character with bright, juicy hops to deliver plenty of flavour while remaining refreshing and easy drinking.

Cascade, Citra and DynaBoost Simcoe bring citrus, tropical and floral hop character, supported by restrained bitterness and a smooth finish.

Flavour Profile

Expect vibrant citrus, tropical and floral hop notes up front, supported by a soft malt foundation. The palate is refreshing and smooth, with light bitterness keeping the beer balanced and highly drinkable.

How It Was Made

This Is The One is brewed with Muntons Maris Otter alongside Golden Naked Oats, torrefied wheat, torrefied oats and dextrin malt to build flavour and mouthfeel. Cascade, Citra and DynaBoost Simcoe provide the bright, juicy hop character, while clean fermentation allows those aromatics to remain at the forefront.

How Can a Beer Brewed With Barley Be Gluten Free?

The gluten-free status of This Is The One is achieved through our brewing process rather than by removing traditional brewing grains from the recipe. We use a specialist enzyme during production to reduce gluten, followed by an extended conditioning period before the beer is released.

We don't rely on the process alone. This Is The One is regularly independently tested for gluten by Murphy & Son using R5 ELISA analysis. Our results are typically around 10 parts per million (ppm), comfortably below the 20 ppm threshold required for a gluten-free claim in the UK.

This means we can brew with ingredients including malted barley while producing a finished beer that meets the requirements for a gluten-free claim. Barley is still clearly declared as an allergen.
